During the beginning of October, the grapes reach optimal ripeness and the winemaking process commences at the vine. In the vineyard, the withering process takes place by cutting the petiole of the grapes, but leaving them on the vine for a further 15 days. During this period, the grape’s weight is halved through the evaporation of liquid. This drying process adds typical notes of ripe fruits to the wine, such as plum and raisins. Following the drying period the grapes are handpicked and pressed before the fermentation process begins. After the grapes are pressed, the juice and the grape skins are left together for an extended period of time, this is to enhance the extraction of flavours and provide the characteristic red colour. The final part of the winemaking process is to leave the wine in barrels for approximately 3 to 4 months – this aging adds pleasant notes of spices and vanilla.
